
Napa Cabbage Salad
A favorite Asian-inspired salad featuring Napa cabbage, crisp vegetables, and a sweet, savory sesame dressing, topped with crunchy toasted almonds and ramen noodles.
Equipment
- Cuisinart or Food Processor (optional)
- Blender or Jar (for dressing)
- Large Skillet
Ingredients
Salad Base
- 1 large Napa cabbage or green cabbage chopped
- 1 bunch green onions chopped (optional)
- 3-4 carrots chopped or grated
- 2-3 celery stalks sliced
Dressing
- 1/2 Cup sugar
- 1/2 Cup vinegar
- 1 Cup oil
- 1/4-1/2 tsp sesame oil
- 2 T soy sauce
- dash garlic powder
Topping
- 1/2 Cup slivered almonds
- 2 pkgs ramen noodles crumbled
- 1/2 Cup sesame seeds optional
- 1/4 lb butter
Instructions
- Combine all salad base ingredients (cabbage, green onions, carrots, celery). You may use a Cuisinart for preparation.
- For the dressing, shake together or blend all dressing ingredients (sugar, vinegar, oil, sesame oil, soy sauce, garlic powder) well.
- Prepare the topping: melt the butter in a large skillet. Sauté the slivered almonds, crumbled ramen noodles, and optional sesame seeds in the butter until they are golden brown.
- Just prior to serving, toss all ingredients (salad base, dressing, and topping) together.
Notes
If you do not add the topping, the salad keeps well in the fridge after mixing. The sesame seeds are optional because sesame oil is already in the dressing.
