Swedish Meatballs

A simplified Swedish meatball recipe from the kitchen of Kimberly Gleeson. Traditionally served on Christmas Eve as part of her great grandma Agnes Leaf’s Swedish Smorgasbord.

Ingredients
  

Meatballs

  • 1 1/2 lbs lean ground beef
  • 1 cup bread crumbs
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg

Sauce

  • 2 – 3 cups water
  • 2 beef bouillon cubes
  • 1/4 cup flour for thickening, shaken in water

Instructions
 

  • Mix the ground beef, bread crumbs, egg, salt, pepper, and nutmeg together. Form into small meatballs.
  • Brown the meatballs on all sides in a large pan on medium heat.
  • Remove the meatballs from the pan.
  • Add 2 to 3 cups of water to the pan drippings.
  • Add 2 beef bouillon cubes to the liquid and simmer until the cubes are dissolved.
  • Season the sauce to taste.
  • Thicken the sauce with about 1/4 cup of flour, shaken in water to prevent lumps.
  • Pour the sauce over the meatballs and let them simmer in the sauce until they are cooked through.
