
Sydney’s Stuffed Mushrooms
Large mushrooms stuffed with a creamy, savory filling featuring cream cheese, shrimp, and Parmesan, baked until the tops are golden brown.

Ingredients
For the Filling
- Large mushrooms
- 2 packages cream cheese
- Garlic powder (a small bit)
- Salad shrimp (baby kind)
- Mexican Cheese Mix + Parmesan Cheese
- a little red onion chopped fine
- a few mushroom stems diced finely
- Fresh parsley
- a small bit Dijon
- a small bit Lemon
Instructions
- Preheat oven to 350°F.
- Remove the stems from the large mushrooms.
- Soften the cream cheese (in the microwave if necessary).
- Add the remaining ingredients (garlic powder, salad shrimp, Mexican cheese mix, Parmesan cheese, red onion, diced mushroom stems, Dijon, and lemon) to the softened cream cheese and mix together.
- Spoon the filling into the mushroom caps. Sprinkle the tops with extra cheese and fresh parsley.
- Bake in the oven until the tops are brown.
Notes
Another version: Add blue cheese and/or bacon to the filling for a variation. Yum yum!
