Ingredients

For the Filling

  • Large mushrooms
  • 2 packages cream cheese
  • Garlic powder (a small bit)
  • Salad shrimp (baby kind)
  • Mexican Cheese Mix + Parmesan Cheese
  • a little red onion chopped fine
  • a few mushroom stems diced finely
  • Fresh parsley
  • a small bit Dijon
  • a small bit Lemon

Instructions

  • Preheat oven to 350°F.
  • Remove the stems from the large mushrooms.
  • Soften the cream cheese (in the microwave if necessary).
  • Add the remaining ingredients (garlic powder, salad shrimp, Mexican cheese mix, Parmesan cheese, red onion, diced mushroom stems, Dijon, and lemon) to the softened cream cheese and mix together.
  • Spoon the filling into the mushroom caps. Sprinkle the tops with extra cheese and fresh parsley.
  • Bake in the oven until the tops are brown.

Notes

Another version: Add blue cheese and/or bacon to the filling for a variation. Yum yum!
