
Chocolate Covered Cherries
A homemade candy recipe creating sweet fondant-covered cherries dipped in a melted chocolate and paraffin mixture, perfect for gifting.
Equipment
- Double Boiler
- Waxed Paper

Ingredients
Cherry Fondant
- 1/2 box powdered sugar
- pinch salt
- 2 Tablespoons sweetened condensed milk
- 1 small bottle cherries
- 2 Tablespoons margarine
- 1/2 teaspoon vanilla
Chocolate Coating
- chocolate
- paraffin mixture
- chopped nuts optional, for leftovers
Instructions
- Cream the margarine (butter) and powdered sugar together. Add the condensed milk in small amounts. Add the salt and vanilla. This creates the cream mixture (fondant).
- Drain the bottle of cherries.
- Roll each cherry in the cream mixture to cover it well. Place on a tray in the freezer until firm, inserting a toothpick into each cherry for dipping.
- Melt the chocolate and paraffin mixture in the top of a double boiler.
- Remove the chocolate mixture from the heat. Dip the cherries one by one (do only a few at a time) and drape onto waxed paper to set.
- For any fondant mixture left, add chopped nuts and roll it into oblong rolls and dip in the chocolate mixture.
Notes
The instructions suggest using margarine for the cream mixture. For the dipping process, it is important to only dip a few at a time and work quickly. Any leftover fondant can be mixed with chopped nuts and dipped as a separate candy.
