
Spaghetti & Asparagus
A quick and easy pasta dish featuring thin spaghetti or vermicelli mixed with a light sauce of ham, asparagus, butter, and Parmesan cheese.

- 1/4 C butter (1/2 stick)
- 1/2 T olive oil
- 1/2 onion thinly sliced
- 1 slice Parma ham chopped (Caranghan)
- 1/2 lb asparagus cut into slivers
- 1/2 C water
- 1 chicken bouillon cube
- 1/2 lb thin spaghetti or vermicelli
- 1/2 C half & half
- 1/4 C Parmesan cheese
- freshly ground pepper
Instructions
- Heat butter and oil in a 1-quart saucepan.
- Add onion and sauté until golden.
- Add ham and sauté briefly.
- Add asparagus, water, and bouillon cube, and simmer for 15 minutes.
- While the mixture simmers, boil the spaghetti for 5-6 minutes and drain well.
- Add the asparagus mixture and 1/2 cup half and half to the saucepan. Cook over low heat until warmed through.
- Toss the sauce with the boiled spaghetti. Top with Parmesan cheese and pepper.
