
Super Tomato Soup
A comforting, classic tomato soup thickened with a roux and finished with warmed milk for a rich and creamy texture.

Ingredients
Soup Base
- 3 cup peeled & chopped tomatoes
- 1/2 cup chopped celery
- 1/4 cup onion
- 1 tsp basil
- 2 tsp brown sugar
- Salt & pepper
Thickening & Finishing
- 1/2 cup flour
- 1/2 cup margarine
- 4 1/2 cup warmed milk
Instructions
- Heat the tomatoes, vegetables (celery, onion), and seasonings (basil, brown sugar, salt, and pepper) in a pot.
- In a separate saucepan, melt the margarine and whisk in the flour to create a roux.
- Heat the milk separately until warm.
- Thicken the tomato mixture by whisking in the roux.
- Pour the warmed milk into the thickened tomato mixture and stir together to finish the soup.
