Ingredients

Soup Base

  • 3 cup peeled & chopped tomatoes
  • 1/2 cup chopped celery
  • 1/4 cup onion
  • 1 tsp basil
  • 2 tsp brown sugar
  • Salt & pepper

Thickening & Finishing

  • 1/2 cup flour
  • 1/2 cup margarine
  • 4 1/2 cup warmed milk

Instructions

  • Heat the tomatoes, vegetables (celery, onion), and seasonings (basil, brown sugar, salt, and pepper) in a pot.
  • In a separate saucepan, melt the margarine and whisk in the flour to create a roux.
  • Heat the milk separately until warm.
  • Thicken the tomato mixture by whisking in the roux.
  • Pour the warmed milk into the thickened tomato mixture and stir together to finish the soup.
