Fruit Torte

Ingredients

  • 1 cup sugar
  • ½ cup butter
  • 1 cup flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • 24 plums pitted, halved
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon

Instructions

  • Cream
    1 cup sugar, ½ cup butter
  • Add
    1 cup flour, ¼ tsp salt, 1 tsp baking powder, 2 eggs
  • Place in 9" spring form. Add to top and cover entire surface with the fruit.

  • Sprinkle top with
    1 tbsp sugar, 1 tbsp lemon juice, 1 tsp cinnamon
  • Bake at 350° for one hour.

Notes

Substitute plums with any mixture of the following: 1 pint blueberries, sliced apples, sliced peaches, or apricots. Delicious when served with vanilla ice cream or whipped cream. Best served slightly warm. Refresh in oven, if desired.
