Ingredients

butter

  • 1 1/2 C flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 C quick cooking oatmeal
  • 1 1/4 C brown sugar
  • 1/2 C butter or margarine softened
  • 1/2 C shortening

Caramel Filling

  • 1 can sweetened condensed milk 14 oz
  • 1/2 C butter or margarine
  • 1/2 C brown sugar

Instructions

  • Preheat oven to 350°F. Grease a 9x13 inch pan.
  • Combine the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter/margarine, shortening, and 1 1/4 cups of brown sugar.
  • Add the flour mixture to the creamed mixture and mix until blended. Stir in the quick cooking oatmeal.
  • Press two-thirds of the oatmeal mixture firmly into the greased 9x13 inch pan to form the bottom crust.
  • For the caramel filling, mix the sweetened condensed milk, 1/2 cup butter/margarine, and 1/2 cup brown sugar in a saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute, stirring constantly.
  • Pour the hot caramel filling evenly over the oatmeal crust.
  • Crumble the remaining one-third of the oatmeal mixture over the caramel filling.
  • Bake at 350°F for 40 to 45 minutes or until golden brown. Let cool completely before cutting into bars.
