
Chicken Salad in Melon Rings
Refreshing chicken salad served in melon rings from Jean Sedbury’s kitchen
Ingredients
- 3 tbsp lemon juice
- 4 cups chicken cooked and cut up
- 1 cup chopped celery
- 1/3 cup onion chopped
- 1 tsp salt to taste
- 1 tsp pepper
- 1 jar pimiento drained
- 1/4 cups almonds slivered and toasted
- 1/3 cups mayonnaise
- 1 cup halved seedless green grapes
- 2 melons for rings
- 8 cups salad greens crisp
Instructions
- In medium bowl, pour lemon juice over chicken. Add celery, onion, salt, pepper, pimiento, almonds, mayo, and grapes. Cover and chill.
- Cut the melon into rings. Spoon salad into center of melon rings.
