Chicken Salad in Melon Rings

Ingredients
  

  • 3 tbsp lemon juice
  • 4 cups chicken cooked and cut up
  • 1 cup chopped celery
  • 1/3 cup onion chopped
  • 1 tsp salt to taste
  • 1 tsp pepper
  • 1 jar pimiento drained
  • 1/4 cups almonds slivered and toasted
  • 1/3 cups mayonnaise
  • 1 cup halved seedless green grapes
  • 2 melons for rings
  • 8 cups salad greens crisp

Instructions
 

  • In medium bowl, pour lemon juice over chicken. Add celery, onion, salt, pepper, pimiento, almonds, mayo, and grapes. Cover and chill.
  • Cut the melon into rings. Spoon salad into center of melon rings.
