
Papa Geraci’s Spaghetti Sauce

Ingredients
- 1 green pepper
- 1 large onion
- 2 cloves garlic chopped, amount to taste
- 1 lb mushrooms
- 3 stalks celery chopped, amount to taste
- 43.5 oz stewed tomatoes 3×14.5 oz cans
- 84 oz tomato sauce 3×28 oz cans
- 12 oz tomato paste 1×12 oz can
- 1 tsp oregano leaf
- 1 tsp basil
- 1 tsp marjoram
- 1 tsp pepper
- 1 sage leaf
- 1/4 tsp rosemary
- 1 tsp garlic powder
- 1 tsp salt
- 2 tbsp olive oil for sauteing
- 3/4 cup parsley fresh
- 1/4 cup sugar
Instructions
- Chop onion, garlic, mushrooms, and celery.
- In a large pot, saute onion in olive oil.
- Add everything else.
- Cook for 2-3 hours and adjust spices to taste.

Adjust spices to taste after cooking.
