
Oatmeal Caramel Bars
Chewy oatmeal bars with a rich, decadent caramel filling, perfect for a treat or dessert.

Ingredients
butter
- 1 1/2 C flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 C quick cooking oatmeal
- 1 1/4 C brown sugar
- 1/2 C butter or margarine softened
- 1/2 C shortening
Caramel Filling
- 1 can sweetened condensed milk 14 oz
- 1/2 C butter or margarine
- 1/2 C brown sugar
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch pan.
- Combine the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter/margarine, shortening, and 1 1/4 cups of brown sugar.
- Add the flour mixture to the creamed mixture and mix until blended. Stir in the quick cooking oatmeal.
- Press two-thirds of the oatmeal mixture firmly into the greased 9×13 inch pan to form the bottom crust.
- For the caramel filling, mix the sweetened condensed milk, 1/2 cup butter/margarine, and 1/2 cup brown sugar in a saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute, stirring constantly.
- Pour the hot caramel filling evenly over the oatmeal crust.
- Crumble the remaining one-third of the oatmeal mixture over the caramel filling.
- Bake at 350°F for 40 to 45 minutes or until golden brown. Let cool completely before cutting into bars.
