Ingredients
  

  • 4 egg whites
  • 1 cup superfine sugar
  • 3 tbsp cornflour (cornstarch)
  • 1 tsp white vinegar

Instructions
 

  • Preheat the oven to 150°C (300°F).
  • Place the egg whites in the bowl and beat until soft peaks form. Gradually add the sugar until the mixture is glossy.
  • Sift the cornflour over the mixture with the white vinegar and fold through.
  • Pipe or spoon the meringue mixture into a 20cm (8in) round on baking paper. Place in the oven.
  • Reduce the temperature to 120°C (250°F) and cook for 1 hr. Turn the oven off and allow the meringue to cool in the oven.
  • Top with whipped cream, fresh fruit and serve.

Notes

Tips: Make sure egg whites are at room temperature.
