
Essie’s Pavlova

Ingredients
- 4 egg whites
- 1 cup superfine sugar
- 3 tbsp cornflour (cornstarch)
- 1 tsp white vinegar
Instructions
- Preheat the oven to 150°C (300°F).
- Place the egg whites in the bowl and beat until soft peaks form. Gradually add the sugar until the mixture is glossy.
- Sift the cornflour over the mixture with the white vinegar and fold through.
- Pipe or spoon the meringue mixture into a 20cm (8in) round on baking paper. Place in the oven.
- Reduce the temperature to 120°C (250°F) and cook for 1 hr. Turn the oven off and allow the meringue to cool in the oven.
- Top with whipped cream, fresh fruit and serve.
Notes
Tips: Make sure egg whites are at room temperature.
